The scott and specialised, i have no experience of.
I have the mens Trek 7.1FX, one of the earlier models. Its been a good strong bike, still going well and i wouldnt hesitate to recommend it.
But, you (probably) wont get a rack and mudguards, and only a simple chainguard.
They may not be important now, but if your wife rides in the wet or winter, you may need to buy them later.
The 7.2FX will have slightly different gears on it, possibly an 8 speed instead of 7, but basically the same bike.
My wife has a Dawes Kalahari. A more traditional frame, it does come with mudguards, rack and full chainguard...looks like this...

It goes very very well, she loves it, but i have reservations about the paint quality. It has some light scratches already, they may be our fault, but i'm surprised.
The thing i learned was i was trying to steer her toward certain bikes. It doesnt neccessarily work....in fact she told me to bugger off. 'It's going to be my bike, and i'm going to choose it' she said

Happy hunting...and most importantly, she must try to have a test ride. Its important to get the right size, make sure she can stand over it, get the right leg extention while riding it and feel comfortable with hands on the handlebars.
