lining up sprockets ?

How do I line up the front and rear sprockets on a 7 speed MTB ?

I have loads of adjustment space on the rear axle.

This bike, like all my bikes are cobbled together from used parts, not neccesarily all perfectly compatible !

Adjustment space on rear axle doesn't sound right...

If you've used or mixed axles, spacers etc or had the axle apart and had the cones off as well...its quite possible you've re-assembled them in the wrong place on the axle (as in too far over to one side)

Middle chainring wants to be roughly in line with the middle sprocket.
Of course, it's rather more critical that the rim is roughly central in the frame!

As above - plus your crank may simply be wrong for the frame. Cranks come in various offsets to accommodate different frames and enable a good chainline (where the chain is as near to straight as can be achieved between front and rear in middle gears) Having said that, some cheap bikes seem to be thrown together out of spare parts and I have seen some horrendous examples of poor chain line over the years.
