Looking for a route this summer!

Hello, I am new to this forum so please bare with me.
I am currently searching/planning a route for late summer next year.
Ideally looking for somewhere hot, near the sea or lakes and I'm pretty flexible on the distance as I don't have a set time this needs to be completed by.
Another point is that I obviously don't want to be stuck on major roads for days on end.
Any suggestions or ideas would be greatly appreciated.

I did complete a tour last year from my home town of Brighton down to Morocco.
This was on a cheap bike with minimum gear and took me 3 months.
Following the coast on the west of France, across the Pyrenees and down the west coast of Spain.
Best thing I've ever done and I need to get back out there.

We are cycling the length of France, but it looks like you have done that on the way down to Spain.

I'm going to be doing part of the national cycle route 2 this May. (the yellow route along the coast)
