As far as tinned peas are concerned, garden peas are peas that have been cooked and canned from fresh, processed peas have been dried (to save money during transportation) before reconstituting and canning.

Tinned peas that are commercially grown & cooked.
Fresh peas are commercially grown & harvested then sent to market.
Frozen peas add the freezing stage.
But garden peas come out of a known garden or allotment, these are almost always much nicer than the 3 types before.
