I fry my onions/chillies/garlic in a saucepan and brown off the bacon and mince in a separate frying pan then add that to the main saucepan after a couple of minutes frying together I drain the oil off back into the frying pan and reserve for later. I use that to re-fry the tin of pinto beans (or dried ones that I've soaked and cooked)

In the fall we buy big bags of new crop pinto beans. In the same way as veg out of the garden and into the mouth tomatoes and carrots and snow peas and green beans are hands down tastier than supermarket, new crop beans taste so much better. My wife adds a tablespoon or so of bacon drippings to the beans when simmering till tender for a little richer taste.
