I might not manage it all in one sitting though.

Shed load of butter or better ghee. very very slowly fry some onion until it caramalises and towards end add what spices you want, garlic, tomato or fresh chillie, onion or mustard seed, pretty much what you fancy and add it with fresh coriander just before serving leaving it sitting on top of the dhall (I'm drooling now). The more butter the better it will taste!

Thanks for that Karen, there's plenty of those ingredients done that way in there already. I'll give it a go for one of the many leftovers I'll be having.

I've used ghee for the first time in cooking it so am interested in how/if it tastes different.

Speich - it's all in the pan this time. So far!

Secret ingredient = Asafoetida. Seems to help.

Yep, 12 pints, got a big pan - I could have made several more in there too.

Beware ghee has to be butter ghee and not veg. ghee to taste really good.
