Currently I own this bike in a 61cm XL size.

Unfortunately I had an accident and my bike is currently out of action and I am considering an upgrade anyway!

Ideally I would like full 105 groupset ( As opposed to a mix and match ) - Campagnolo Zonda Wheelset and a Carbon Frame with wires running inside the frame.

Looking around it seems I cannot get what I want in a new bike, there always seems to be random bits of the groupset which are running on much lower spec bits and typically a poor set of wheels.

Perhaps someone could help me with my requirements, and if I need to go for a self build perhaps point in the right direction of which bits I should get that I have yet to decide on ( IE frame , seat, seatpost and finishing touches ).

Also does anyone know a good bike shop which could build up something for me around Manchester?

I would say you are unlikely to get Zondas on a 105 spec'ed bike right out the box. Most bikes come with some pretty basic wheels. I would say, just fix up what you have and buy a set of Zondas.

I fixed my bike, it needed a hanger, rear mech, new chain and cassette so its all back on the road now. I still however fancy a new bike, I think I may go for the Zondas now and then upgrade the entire bike later and simply move the wheels over.

Any recommendations for a full Carbon / 105 level bike or better for ~ £800-1000?
