Bike fit
@livpoksoc is a tricky area, unless experienced, which I am not particularly.
I would agree with Doyleyburger that going too short on the stem will cause geometry/stability issues & with vickster that much shorter than stock would/could suggest a too large frame.
I made a mistake with my old Giant Defy, which, although a great bike was too large & so I didn't ride it much & had to offload for another.
A size 56,58 or even 60 generally is fitted with a 110mm/11cm stem, although manufacturers obviously can differ on this.
I would be inclined not to go any less than 100mm or you will be into MTB territory & the bike will become very flighty.
Shoulder width is important, to get the correct width bar & reach is important too as well as torso to leg length relationship.
Cleat fitting & float is very important as this is where a lot of injuries can be sustained (although the day I understand it, it will rain £50 notes I am sure).
Although not having done it yet, I would invest in a proper bike fit, my back is currently bad enough without a poorly adjusted bike.
