I tried putting mine in dr_pink's hand basket, she is very good at withering looks.

If you have QR pannier hooks, you should really take them with you. I use the shallow supermarket trollies and put the pannier in the trolly. You can also pack better inside a supermarket. You have to be careful about corners/edges of packaging wearing pannier fabric. You also need to protect crushables.

If heel strike is an issue, do your pannier have a square profile or a heel cutout ?

I have Ortliebs so I just take it with me. Anyway it will have tons of stuff in it from first aid kit, puncture repair including the wheel key, purse, phone, clothes etc so I'm not leaving it on the bike when it's so easy to remove. I occasionally get heel strike and it just means I've either popped it back on the bike in the wrong place or one of the clips has come undone slightly and I just need to re tighten it.

I have a work set, and a shopping set of panniers. I've about worn both out, so now I'm due two sets of panniers. And these didn't even tour that much in their day.

I have 2 sets of panniers. A Lidl set which seem nice and are shaped at the bottom, and an Altura set - very nice quality and shaped as well, as far as I remember.
I don't fancy riding with them on all the time but nether do I fancy them getting stolen off the bike!

Ortleibs are too much for what they are.

Do they do a better job of carrying stuff than cheap ones in anything other than heavy rain?

No.

I use one or two of my cheapo Edinburgh Bike panniers on most rides.

That's about twice a week for the last three years.

They show no sign of wearing out, which I thought they might by now.

I bought my Ortliebs in 2008, and I use them every day commuting, shopping etc. for me the price has been worth it, I can get spares to fix them, they are waterproof rather than my previous set that let anything other than mizzle in and only lasted 18 months. They clip on and off really easily. If I needed to I would buy another pair after shopping around for the best deal, the price quoted is almost double what I paid for my pair.

The panniers on my electric bike are cable tied on, so are more or less permanent.

For my mountain bike, I have a beam type rack which fastens to the seatpost. It has some cheapie nylon panniers velcro fixed to it, and if I need to use the panniers on the MTB I just fix the whole lot into place. But I can get those panniers off the beam rack pretty easily if, for some reason I need to go without them.

I have a cupboard full of handbags I no longer use since I've started cycling everywhere.
Nowadays I just carry one of them jiffy cycling bags to the shops, a purse for change, my switch card, my mobile, Garmin and front light in pocket.

When I have used panniers to go shopping, I hang the panniers from the sides of the trolley. Then when at the till, it is easy to pack your shopping into them.
