I picked up an 80's Repco Monaco for not very much a few months ago because it was my size, a 25 inch frame. It was original except for the seat and a steel rim on the rear.
This is what it would have looked like when new:

I also had this laying around, a very early Europa mountainbike that I bought purely for the bullmoose handlebars and Suntour thumb shifters:

They both sat there for a while until I saw a picture online of a road bike fitted with some bullmoose handlebars and decided to combine the two to create something a little different.

I replaced the mismatched 27 inch wheels with a nice set of mid 90's Mavic Reflex wheels with new Maxxis Overdrive tyres in 700 x 32 size.
The drivetrain was upgraded with a 42/52 Shimano RSX crankset and 105 front derailleur. I used the original rear derailleur as it worked well.
The Suntour thumb shifters are friction only and work perfectly.
New grips on the bars, an old rack from another project and ready to go.
The ride is smooth and solid, the bullmoose bars flex a lot less than a traditional quill stem with flat bars.
While it won't win any beauty contests I'm really happy with the result.
