Having worked 2 large industrial bakeries like this I can confirm that hygiene standards are shocking. Because bread is seen as a low risk food when it comes to food poisoning (when compared to meat, dairy etc.) a lot of the workers couldn't give a toss.
In the places I worked it was daily occurrence to see someone pick bread up off the floor and put it through the slicers and package it. It was also a daily occurrence to see one particular baker with his hand in his ass crack picking yesterday's dinner off his cheeks.
The machines were never cleaned, scrap dough that had fallen on the floor was often reworked into another mix the list goes on. Of course when it came time for an audit all of that was hidden away.
