I use a Garmin Forerunner mounted on the handlebar for recording my rides, I know a lot of people use a mobile app, I carry my phone in the Jersey back pocket, I might experiment with mounting it on the bars/stem, can anyone recommend a good waterproof mount ? battery drain could be an issue, how does it fair from constant use ?

Be careful with the one you get, the iPhone mount I have comes off it you hit a pothole hard. My 4s lasts a couple of hours with strava running, garmins much better

Step messing around with that; just get yourself a Garmin Edge.

I find that battery drain is no problem whatsoever when in airplane mode.
With conservative use of screen 24 hours is quite achievable. (endomondo)

Knowing routes these days it stays in my pocket so for GPS tracking only screen usage is often zero.

I have a top tube bag that holds my phone - it's clear fronted so phone is visible at all times and can be operated through the screen. £2 off eBay delivered.

I use an HTC one mounted on a piece of aluminium bolted onto the stem.
If it is a longish trip I have a battery booster as using Google maps and apps like map my rde will drain the battery.
The phone is mounted using an old gel case with Velcro glued to the back. An elastic band protects against the odd severe jolt and there is some spring into the aluminium mount.
This may sound a bit heath Robinson into someone on a 1+k bike but I'm not that guy and it does not look a mess and works very well indeed. I'll post a pic tomorrow if I get the chance .

I find the Garmin is better for seeing what I am doing but the IPhone is easier to upload to Strava as you just press save ride rather than having to connect up to a PC . I know , I'm lazy like that

Those plastic document wallets work well with touch screens. I've been out in monsoon conditions and it has worked fine.
