Felaffel, finely chopped up salad, and hummus, is the 'classic' pitta-filler. At least, that's our standard.
Oh, and they must be warmed up under the grill until they're just piping hot, but not toasted. They should still be soft and pliable, not crisped like boards. Heating them up straight from frozen works fine.
