Looking at the 105 rear derauilleur on the Canyon Ultimate CF SL and it looks like it will take a 32 tooth cassette
although the tech docs and both the SS and GS say 28 tooth max
 
The old 5700 105 can definitely take a 28t, dont take it as gospel but I heard roumour that the new 105 derailleurs will handle up to 32. That wasn't reall all that helpful :rolleyes:

its the 5700 on the canyon and the cassettes is an 11-32

I have a 5700 on the Kinesis and I used a 28t last summer but its circa 4 year old.
i got a 5700 on the new bike and fitted it with an 11-30 and it all works super duper
