The freehubs are fairly well sealed, and water is unlikely to get in without provocation, such as falling off in a ford, riding through a hub deep flood, or using a hosepipe when cleaning the bike. In the first instance, I'd try drying out the wheel by keeping it somewhere warm to hot for a couple of days.

Freehubs are replaceable without having to junk the entire wheel. Take the axle out, poke a 10mm allen key down the hole, and unscrew (takes some grunt).
They aren't meant to be taken apart. Shimano used to sell the tool you need, but stopped some years ago. The main bearing cup has a couple of little notches in the top edge that the tool engaged in so you could unscrew the cup. The trouble is the notches are too small for easy bodging so you'd likely just end up damaging the cup.
