Sounds interesting. Brings to mind "The Yarn of the Nancy Bell"

Twas on the shores that round our coast from Deal to Ramsgate span
That I found alone on a piece of stone an elderly naval man ...

a daytime Christmas/New Year ride, and then next year as a night time ride. And there are ways between Dover & Deal which don't involve the A258 or steps down to the sea.
Very much like this idea, esp the night time ride. As for winter, also good but the pic that is my avatar was taken near Reculver in winter. Two train rides is no problem but starting at Rye is preferable to Hastings, which entails Fairlight Hill  So, a good idea.

One thing worth remembering with this ride is that for the most part it is fairly exposed to the elephants.
The costal section is partly northbound and then turns pretty much through 90° to continue westward.
If the wind direction and strength is not favourable, your day (or night) is going to be one of struggle.
The first time we did this ride it was WINDY.
Waves of 4 to 5 metres in height were breaking in places against the prom.
Much clenching took place.
