Hopefully someone who knows the route will be along but you could try

http://www.openstreetmap.org/

Make sure you turn on the cycling layer - look for the layers icon in the top right-hand of the screen.

Alternatively you could download a map from openfietsmap.nl or velomap.org. Open Street Map is usually very good for highlighting cycle routes.

Get the ferry from Rotherdam to The Hook of Holland. Find the LF1 cycleroute and cycle up the coast to Zandvoort. From Zandvoort head through Haarlem and find the LF20 route to Amsterdam. You can easily do it in a day. All the cycleroutes are well marked and every junction in marked with a number. All you have to do is cycle from number to number.

Go to this website
http://falk.nl/

Type Hoek van Holland in the box top left marked Ik wil fietszen in
Then press the zoeken button next to the box

A map with all the junction numbers will appear. Just navigate around the map all the way to Amsterdam. The route up the coast goes through Monster, Scheveningen, Katwijk and Noordwijk. Turn right at Zandvoort and keep on to Amsterdam.

Bingo.

Edit: @Shaunthesheep I can send you the list of junctions on the route I took back in September between Hoek van Holland and Amsterdam, if you want.

From Europoort you've got two choices to get to Hook.

Cycle to Pistoolhaven and get the fast ferry to Hook - but make sure it's working when you're travelling as I'm not sure it runs all year; or

Cycle to Rozenburg, get the ferry to Maasluis and cycle to Hook. This is longer, but the ferry runs all year and is very frequent (every 30min or so).

That ferry runs all year, but only runs Monday to Friday during the early morning and late afternoon. If arriving at Europoort during the week, you should have enough time to get the last morning ferry from Pistoolhaven at 09:35.

I just completed a ride from Europoort to Abcoude (just south of Amsterdam). Amsterdam Centraal can be reached from Abcoude station in 20 mins.
Didn't fancy the traffic, crowds, risk of theft, tramlines etc in the centre. Hotel Abcoude was very nice - bikes locked up for night indoors. Nice bar/restaurant nearby.
Route itself was wonderful. I used 'Falk' - now renamed www.Planjeroute.nl . Basically followed the numbers. Surprisingly easy. If you have never ridden in Holland, it is a bucket-list 'must'. Cycled alongside canals, across fields, through parks - very little sharing with cars. Approx 58 miles each way. 4 1/2 hrs riding time.
