I find that I do both. Topeak wedge with spare tube and tools, Jersey stuffed with food, phone and so on. Just bought a Topeak tri bag which looks like it will be useful for longer rides (more food..)

I use a Carradice Nelson saddle bag, big enough to carry loads of stuff, including trousers/t-shirt for work.
Useful on long leisure rides as it can carry a good sized packed lunch. The bag support has a limit of 10kg which is plenty.
I have the Nelson's smaller brother, the Lowsaddle. Great bag, but a bit big for "just a ride".

I've got a Super C Audax which is smaller still, but still on the large side if you're not taking along a lunch, waterproofs &c

'Course, one could argue "What sort of a ride is it if you don't have a picnic lunch?" and I would have to agree that it would be the poorer.

I use the tool bottle method. Keeps the weight low rather than under the saddle.
I also have a Topeak wedges and an expanding dirt monkey pack.
For other odds and sods as required, but the essentials are in the tool bottle.

The Decathlon small handlebar bag 2.5l is a brill piece of kit for simple extra volume before getting into carradice expense.

I prefer not to carry stuff in my pockets.

My cycle shirt pockets are stuffed - on the way to work with sandwiches, keys, also phone and bank card in a little bag. I can also fit a rolled up waterproof jacket into the pockets.

I always have a Decathlon small wedge saddlebag which has an inner tube, patches, tyre levers and multi-tool and is full.

On longer rides I've a bag which sits on the crossbar by the stem, or use a small rucksack if I need to carry anything bigger, or a bigger wedge bag.

I've been thinking about a new one for long winter rides. Don't want some big bull ball sack slapping round under my saddle but needs to take tools + food as my Gore waterproof has no pockets and is just about perfect for cold wet rides in just a long sleeve base layer. hmmmm

Topeak Aero Wedge saddle bag here, don't like stuffed pockets. Prefer the weight to be on the bike as I carry enough as it is!

(Although I do put a gel in each of the jersey pockets)

Oh, I also have one of these for longer rides or rides where I need to carry some extra layers:

Dont overlook the Fizik saddle packs which clip into the slot on the back of a Fizik saddle with no other attachements needed, I used to use Topeak ones, I never lost one, but they never felt safe. These days, I just use the Fizk ones in both large or small on my Arionne or Antares saddles and its a simple job to swap between bikes and not have to purchase brackets for each saddle. The large has the capacity for two innertubes, repair kit, tyre boots and levers, and the small will just take one innertube, plus rest of the tools etc as the large.

There seems to be lots of negative reviews about them breaking, but I have cycled thousands of miles with them over the years and never had a problem

Check the bracket every now and then - the one I had broke (luckily I heard it hit the ground) and I was not amused.
