Sandwich Ideas Please

I'm going to try and take a packed lunch to work for the next few weeks, it's not always possible, or neccessary, so up to now, I've been rotating the same things.

But I'd like some new ideas.

There is nowhere to heat food where I work, so it's got to be cold things.

I like cooking, and pre-preparation is no problem. Today I did sliced boiled egg, hummus and spinach on brown bread.

Oh, and Sandwich Santas, as a non-meat-eater, but training for various run/bike events in the next few months, I', always looking for ways to up my protein intake.

Cheese and jam pieces usually hit the spot for me.:smile:
Mashed sardines and tomato puree.
Mashed bananas.

Beef tomato, goats cheese, basil.

Avocado, mayonnaise, lemon juice (hint of garlic if you like).

Mushroom, roasted veggies, mayonnaise.

I like Soda bread but ciabatta and wholemeal/olive/nutty breads make a change.

Mrs VC really likes boiled egg mashed into red pepper hummus. Sweet chilli sauce also works well with cheese.

Sliced quorn fillets in a wrap with tomato, salad, grated carrot possibly and a mustard dressing.

Humous with grated carrot is one of my favourites, great with seeded bread.

Soup in a flask?

I have packets of flavoured cous cous as a standby. Just cover with boiling water and leave to stand. You can also add in chopped cucumber, cherry tomatoes and/or olives.

Cheese with anything is good for me - pickle, salad etc, but also sweet stuff like jam - Red Leicester and Strawberry is good.

Thanks guys, but keep em coming!

I've just got in, and am starving. Reading these suggestions has made my mouth water!

I love cheese and jam together, especially goat cheese and apricot jam, my OH says it's just wrong, but that's my opinion of marmite. (bletch)

I confess that on a weekend bike ride, I am partial to 8am stop for breakfast sandwich - thick doorstep bread, buttered, one slice liberally spread with peanut butter, the other with chocolate spread. Stuck together, just rocking.

Has to be cheese for me too...

cheese & tomato sauce,
cheese & onion,
cheese & salad,
cheese (grated) & coleslaw,
or just cheese on it's own if it's smoked applewood.

If I was ever stranded on a desert island, all I'd need for food is bread & cheese :laugh:

Strawberry Jam and banana butty.
Honey and banana butty.

I always have a good feed of these in the days leading up to a big ride, but there that good, any time is the right time
