But I do know a teensy bit about food science including micro. IMO use-by dates are there to provide an indication of quality first and safety second. The intrinsics of the food are very much a factor, as well as preservation and packaging methods and not forgetting how the end product is handled and stored by the customer and consumer. Blah!
