It's also affected by when its opened - usually cream for example will be totally fine if opened after its date on the lid, and seems to start deterioration from that point.

I have a penchant (good word that! probably ought to look it up) for home-made patés. Spread them on my breakfast toast instead of jam you see. Healthy eating an' all that, see? I do quite a variety, one of them is guacamole. Well, it's a sort of paté innit? Trouble with home-made stuff, all those use-by dates get inexplicably left off the pot. So it's back to the good old nose-and-eyes stuff.
My judgement is, go on eating the guacamole even after it's turned brown, as long as it tastes OK. When little blue circular hairy patches start appearing on it, think again. Mind you, how will those blue hairy patches actually harm you? (any microbiologists on hand?)....

But I do know a teensy bit about food science including micro. IMO use-by dates are there to provide an indication of quality first and safety second. The intrinsics of the food are very much a factor, as well as preservation and packaging methods and not forgetting how the end product is handled and stored by the customer and consumer. Blah!Anyway, hope Greedo hasn't got a dose of anything too life threatening.
