My wife cooks (NI style) pancakes with buttermilk, flour, baking powder, salt and no sugar. You have to mix them just before you cook them, otherwise they are like leather. She just chucks them on a cast iron griddle greased with a bit of veg oil smeared on with a bit of kitchen towel. They're wonderful with syrup or with scrambled eggs or whatever. When we stayed at a couple of B and Bs in California they said she should charge for lessons. I can't do them like that, I don't have a light enough hand.
My mum is very good, but hopeless with handing on the recipe as she is one of those that can cook by eyesight whether it is drop scones, potato bread, wheaten bread or farls, which isn't so good for passing on the recipes.
