Simple mid week supper -2

Remains of the two pheasants. Strip the carcases, chop meat coarsely while chopped bacon is rendering down in the pan, add chopped leeks and thinly sliced carrot to pan. Put carcases to one side for making stock for a rich Saturday game soup. Flour in pan, coat vegetables and bacon, cook gently for two minutes, then add left over gravy and some milk. Stir in chopped pheasant and cook through gently. Adjust moisture and seasoning. Add swirl of cream and let cool.

Prepare caramelised orange dessert and then prepare pastry. Use surplus pastry for cheese straws. Assemble pie, and put in oven with the orange dessert. Cook fondant potatoes, a green vegetable, and a simple red wine sauce by cheating like mad with a blender. Masterchef it ain't but it's pretty tasty.

A coat? In a meal? A "simple supper" has become something far more extraordinary. Patrick dresses up his meals.

You coat the hot food in plain flour to cook through and then add the stock. It's basically a roux method. When you are cooking a deep fried mars bar, you coat it in the batter. :okay:
