When I only use one pannier I put it on the offside. I do this because it covers the derealieur , keeping it away from anyone who might brush up against it in the street or on the train, but I notice the majority of people see to use the nearside if only using one. Is it something I am missing or am I putting too much thought into this?

Right. It makes you appear wider to drivers and the car drivers tend to give more room imo.

I tend to use mine on the left side because that the side I mount from and if I'm stopped to fiddle with it I'm not leaning into the traffic. I tried the offside for a while and found it made no difference on passes and was less convenient for me and anyway if a car is going to pass close it won't have something to snag on.
Edit: as Noodley knows, I lost the Cleish Hill TT, despite leading for all of 56seconds (I was no1 though) and ended up finishing 16th out of 32 on my first TT, so I guess I am a loser ;)

I prefer having a single panneir on the right as some up thread said people give you a wide berth, though I got taken out by a African bus driver not long back. The pannier bag got caught in the bus wheel arch !!!
So I dont really have a preferance nowadays

What were you doing in Africa?

Single panniers should be on the n/s. As the weight is offset with the drive that you put through the bike.

Is that why my bike crabs sideways when I stand on the pedals?
