I prefer to have a single pannier on the off side, I dismount and support the bike from the near side so it is easier to load/unload the pannier on the off side.

Absoloutely Left. If its on the right I've scrathced/clipped a few cars as I undertake at lights (forgetting I am using a pannier as I normally use a back-pack) and they don't seem to like it very much - not sure why?

I always use nearside. During darkness/reduced light conditions I have either a reflective band with flashing lights, or just a flashing light strapped to my ankle on the off side, a rear pannier would block this from the view of drivers behind

and I don't like the idea of my pannier getting greasy with stuff flicking off the chain

Can't remember which side it is without checking, but it's the opposite side to where my D-lock goes, to balance things out.

You go fast enough to flick stuff off the chain?

Not a problem for me in more ways than one, I'm old and fat and the pannier is a polypropylene BikeBin and greasy stuff just wipes off.

near side (left) for me, but only because i like to be able to see the cassette and check what gear its in (despite having shifters with the gear numbers on. i guess it comes from riding the road bike (no numbers))

Oooooo, no, no, no, no, no! (said while hopping from foot to foot and wringing hands)

Two panniers always! I hate single panniers! I have a fetish against them, it just looks all wrong!

Just a precaution really, my "pannier' is actually one of those attachable briefcases which I take into the office. There are more than our fair share of hills round here and its mostly rural, so it can get a bit speedy at times..

We all seem to be assuming the single pannier will be on the back of the bike.

I suppose it's obvious to everyone that a single front pannier would be best placed on the near side.
