I made the mistake of cutting mine down without riding for a while first. I could do with another inch or 2 of height increase but I can't do it now. Feck!

You will also probably need to tip your saddle nose down to keep numb nuts at bay. And with this set up: Is it for shorter distances? For long days if 12 hours + this may compromise comfort. It’s a whole new fit really.

Keep the spacers in the event of injury. It’s nice to change your set up if you need to.

Cant see a problem personally with a few shims above the stem
Use an old shim as a saw guide when cutting ,there easy to cut

Also worth noting that you might be able to lower the bars by fitting a more angled stem - a flipped down 10 degree stem will give you a lower position than a flipped down 6 degree stem.
