The issue with horse is that you cant farm it economically, that is why horse meat is tougher, because the horse has past its useful working life then it is eaten.I would give it a go, however I believe there is a reason why we eat cows, sheep and pigs. It's because they taste the best. If badger meat was very tasty then our ancestors would have found a way of farming them, equally, if horse was first class meat then there would be huge herds of them being fattened up.
