I would give it a go, however I believe there is a reason why we eat cows, sheep and pigs. It's because they taste the best. If badger meat was very tasty then our ancestors would have found a way of farming them, equally, if horse was first class meat then there would be huge herds of them being fattened up.
 
No simply no, cows are bred for beef, Sheep are bred for lamb, pigs are bred for pork..........horses are bred for racing/riding.............I personally don't like them but wouldn't want to eat one, I wouldn't want to eat anything anyone called a pet.........chicken is an exception.........George is dinner on sunday

The issue with horse is that you cant farm it economically, that is why horse meat is tougher, because the horse has past its useful working life then it is eaten.

This, obviously is in the Marais, but my 'favourite' Chevaline was/is? in Rue Lepic - a blood-red tiled edifice with magnificent gold detail. Wish I still had the photo.
Might be a useful money-spinner if William Hill opened up a few 'shops within shops' perhaps? People would be able to ask for some cheek and some tail..."1/2lb each way please guv'".
