It's years since I made mayonnaise, but I'm sure I remember something about rescuing split mayo by going back to the base ingredients before eggs were introduced and then very slowly adding the separated stuff. Still, if you can rescue it with a drop of cold water, it'll save you from ending up with a lot more mayonnaise than you'd planned in the first place.
You could use another egg yolk and start from scratch if you like it works just the same but the water is quicker.

I like both mayor and salad cream, for different reasons. But I really can't figure out why you'd want to make your own, more bother than its worth. And I've never heard of anyone trying to make their own salad cream, which to me proves that the class war has some way to go.
