Swineherds pie?

I've got some pork left over from Sunday lunch and rather than stir fry it I was thinking of using it as a variation of shepherd's pie.
I've got a recipe called Monday Pie because it's intended to use up leftover beef from the Sunday roast. I don't cook a roast joint, so I make it with mince.

  • 220g Potato
  • 125g Mince, drained
  • 133g Tinned tomatoes
  • 70g Onion, finely chopped
  • 140g Baked beans
  • 40g Cheese
  • 3g Flour
  • 3g Bovril
  • 0.4cc Pepper

  • Parboil the potato 8mins
  • Brown and drain the mince.
  • Stir in tomato, beans, onion, flour, Bovril, pepper.
  • Place in casserole, and cover with sliced potato.
  • Bake 50mins @190
  • Cover with cheese.
  • Bake another 10mins.

Is it legal to eat Monday Pie on a Thursday?


To corrupt Shepherds Pie even more, I do like it with minced Hogart / Hogert.
I have been known to make Tightwads Pie as i think it was quickly called with a bit of left over mince, Oxo Cubes and a mugful of pearl barley when I was feeling particularly parsimonious. I thought it was alright!
