A quick Google, gave me this ..

Stena Line welcomes folding bikes, treating them as luggage if folded, allowing them to be carried on by foot passengers without extra fees. They can be kept in cabins or designated areas. If unfolded, they may be treated as standard bicycles, requiring a small fee on certain routes.

But you should confirm with their customer service dept.

I've taken a Brompton on Brittany ferries as a complete bike. Less hassle than being a foot passenger.

I'm of the same mind. I've just booked a trip for June, going out Newhaven-Dieppe and back Hoek van Holland-Harwich. I don't have a Brompton but I have an Airnimal Chameleon, which packs down to more or less the same size, just with more faff.

It cost me an extra £11 out and £14 back to go as a cyclist rather than a foot passenger, but I don't mind that - I quite like going on ferries as a cyclist anyway and it saves having to carry it about or look after it on board (I don't have a cabin on the outward).

I’ve taken my Bike Friday (nowhere near as compact folded as a Brompton!) on Harwich–Hook of Holland as foot passenger luggage. I was travelling on the SailRail ticket and that doesn’t include bikes.

It was fine and nobody batted an eyelid. The ramp down at Hook of Holland is very long though. On the way back I kept the bike unfolded while pushing it up the ramp, only folding it and putting it in its bag when boarding the actual ferry.
