I prefer to gently and gradually e..a..s..e it open, maybe helping it along with my tougue and a few well-placed fingers, then gradually and repeatedly lick the length of it, gathering up the creamy goodness as I go, till it reaches a satisfactory conclusion.:biggrin: The choux pastry is normally very soggy by this point, and the whole eclair has puffed up and opened out a bit as a result..

Depends how you eat them. If you're not careful, all the cream oozes out of the end before you're ready, and it gets everywhere. Including on your shoes.
