NT, you should beef up the number of noggins and fix a sole and head plate first before fixing studs. Door frame needs 2 studs either side to fix frame to with noggin over. Good idea in bathroom to fix marine ply [or at least WBP ply] to studs before plasterboard to give you good fixings without having to locate studs.
Usually yes*, however I am also working with what was there. The old timbers where already there and some of the ceiling timbers, in the guest room, are attached to them. If it was clear space I could/would have framed the wall with a sole and header. The next bit of wall will be done that way

The studwork around the door isn't there yet, it is held in place with a couple of plaster board tabs to stop it moving about. I will need to make some polygonal studs to fit the change in angle.
There will be more noggins, when I sort out the pile of timber in the other room, and some more studs, hopefully.
Ply on the walls is a good idea, I was going to just double board it, but it will depend on budget. There is not a lot of funds for this but I am determined to make it habitable again.
