I made some bananana cake this evening, following the BBC Good Food recipe suggested by Baggy. I did not need to add any buttermilk, as it was already a very gloopy splodgey contsti consct mix. Also I think the banananas were not ripe enough. I added mixed spice instead of vanilla. However, the cake is very scrummy and delicious. :biggrin:

I might put in some coconut and caraway seed next time.

While still remaining under the general nomenclature of "cake", I think it is at the healthy end of the cakey spectrum.:thumbsup:

It is very crumby, and this results in my having great difficulty cutting thin slices. :whistle:

Nah, don't bother with slices. Leave it in the tin and use a sharpened ladle...

No.1 Daughter made carrot, apple and cinnamon muffins for our homecoming from work this afternoon... fat free with oats and low sugar... yum! We love her very, very much.

Chuffy's just made another 2 bananana loaves! He forgot to put milk in the mix, but they've still turned out nicely. I agree that they're fairly healthy, as cakes go. Suitable for freezing, too :becool:
