I made some bananana cake this evening, following the BBC Good Food recipe suggested by Baggy. I did not need to add any buttermilk, as it was already a very gloopy splodgey contsti consct mix. Also I think the banananas were not ripe enough. I added mixed spice instead of vanilla. However, the cake is very scrummy and delicious.

I might put in some coconut and caraway seed next time.

There is wholemeal flour in it, and proper butter, so with banas etc, it is a healthy sort of cake.

It is very crumby, and this results in my having great difficulty cutting thin slices.

Nah, don't bother with slices. Leave it in the tin and use a sharpened ladle...

Chuffy's just made another 2 bananana loaves! He forgot to put milk in the mix, but they've still turned out nicely. I agree that they're fairly healthy, as cakes go. Suitable for freezing, too
