Thinking of buying myself these as a new toy.
My knives are a mishmash. They do the job but as I say I'm 'thinking' of the above named.
So...... has anyone tried them ?

They will still blunt like any other knife for that money I'd get these.....

Whichever you get

- budget for a sharpener (and use it now and then)
- don't put sharp knives in the dishwasher (that does the cutting edge no favours).

I like the Opinel knives: Parallele, or - if the budget is a touch larger - Intempora

Given where we are posting, they did a Tour de France collaboration back in 2022

I use a decent knif with a blade I can sharpen when needed

I used a glass think for cutting as I have to have something that cannot hide bits of bread and the like in small cuts

but it does blunt knives so I have a good sharpener and use it when it gets necessary

Regardless of the knife my advice is keep the edge polished with a steel. It’s far easier to keep a knife sharp that re-hone (?) a new edge. I use a ceramic steel, but not sure if it’s much better than a traditional steel.

Beyond that - I’d buy a brand with heritage and good reputation. Never, ever put a good knife in a dishwasher and personally my knifes are dropped into a sink of hot water. Just wiped clean.

Get a whet stone for sharpening your knives and a leather strop to maintain them between sharpening.
A copy of this book will be useful
