Just got back (1 am) from our Christmas day extravanga with a bunch of expats. 14 of us sat down, sharing the cooking commitments. We provided the meat - ham and turkey and there was a massive amount of food. I had de-boned the turkey and then had filled the cavity with pork loin, oranges and some haggis - lovely. It was a super day, food, party games, and drinking.

I think tomorrow is going to be hard going. I want to get an hour on the bike and then we have drinks with the boss at noon, probably followed by some friends round to tackle some of the left overs.

Vernon, start a small revolution one year or take the family along for a Goose tasting, you won't look back!

Over 30 odd years I have had every type of Turkey grade available and they're all pretty poor IMO. Goose or ribs of Beef for the biggest meal of the year!

Some progress has been made. A joint of beef went in the oven with the turkey yesterday. I'd not said a thing.

We were out walking at 1, I think 'lunch' was around 4pm :becool:.

They were complete turkey legs, not just drumsticks the whole leg, drumstick and thigh, I had a thigh and the amount of meat on it was amazing, I was close to leaving the table without finishing it, the mrs would have thought I was unwell if I had.

I was so full after our Roast Duck and all the other bits that I had to wait 5 hours to eat the pudding. And we completely forgot about the chickpeas that were in the water with the gammon ...still it will make good soup (as if we needed any extra left overs!!!:giggle:)

Straying away from roasting vegetables - I've just discovered the pleasures of roasting sausages and what a discovery that was! They are far tastier and more evenly cooked in the oven.

What went in your gravy... looks interesting ... is there orange and what else?

The Gravy was the sprout and parsnip peelings, an onion quartered, couple of crushed cloves of garlic plus goose fat all roasted in the bottom of the oven until it's caramelising, then flour is added on the hob, mixed in followed by giblet stock and the herbs and apple from inside the goose (when removed from the oven).
Reduce, season and serve!

Normally the veg peelings cook under the joint, but there's too much fat from the goose!

Awesome!

Thanks ... never thought to use the peelings like that before.... though I have boiled up the bones from yesterday to make soup later.
