You want a bike that is less likely to be stolen, but with an up to £1,000 price tag, and a ‘desirable’ set up? I suspect those are two, mutually exclusive requirements.
A second hand Raleigh Pioneer or similar and a decent lock would be my solution. I can’t imagine a steel frame would be very theft-worthy.

There's lots of ways you can give your son a bike that rides really well but won't attract thieves.

Of course. But I have 2 very nice bikes and my wife has 2 very nice bikes as well.
In that particular situation what bike would you buy your son for Christmas?

That actually sounds like a really solid choice — light, simple, and practical without being flashy enough to attract too much attention. The Trek FX Sport 3 hits a sweet spot for commuting comfort and reliability. Maybe consider fitting some decent mudguards and a rear rack, and you’ve basically got the perfect all-weather city bike.
