The perfect commuting around town bike?

You want a bike that is less likely to be stolen, but with an up to £1,000 price tag, and a ‘desirable’ set up? I suspect those are two, mutually exclusive requirements.
A second hand Raleigh Pioneer or similar and a decent lock would be my solution. I can’t imagine a steel frame would be very theft-worthy.

Anything more showy will get stolen.

There's lots of ways you can give your son a bike that rides really well but won't attract thieves.

Of course. But I have 2 very nice bikes and my wife has 2 very nice bikes as well.

In that particular situation what bike would you buy your son for Christmas?

No more than £1000 as the more covetable the more chance it goes missing when locked at the shops or train station.

I cannot see past a Trek FX Sport 3 at this point.

Lightweight - 11kg
Carbon fork
Shimano CUES 1 x 10 setup for simplicity
MT201 hydraulic brakes
700x42 tyres

Easy to get on and off, the 42s will get you comfortably around most stuff around town
Good visibility with the flat bars and neutral geometry.

Whack a decent lock on it and it seems pretty much ideal?
That actually sounds like a really solid choice — light, simple, and practical without being flashy enough to attract too much attention. The Trek FX Sport 3 hits a sweet spot for commuting comfort and reliability. Maybe consider fitting some decent mudguards and a rear rack, and you’ve basically got the perfect all-weather city bike.
