Tight fit tyre issue on carbon hookless rim wheels

Bought myself a new set of Hunt limitless Sub50 wheels (hookless rim) and new Pirelli P zero Race TLR 28mm tyres to go on them.
Took them to my local bike shop to fit as tubeless and fit my new wheels on my bike. Got a call to say he could not get tyre on wheel as they were too tight and he was about to lose it. I have tried myself for a couple of hours and cannot get even one side of the tyre on either.
There seems to be various issues with this type of thing. I have plastic levers and not pressing too hard as I am fearful of damaging my new carbon wheels.
Any thoughts on what I can do?

The RS are one of the hardest to mount tyres I've ever encountered. Even getting the first bead on is a challenge.

Get one of the BBB type tyre jacks and use it to pull the bead over the rim a little bit at a time. Do not try to pull a big section of tyre over in one go: just work from the edges inward and finish at the valve. If the tool slips, push the tip towards the rim with your free hand. These tools work better than ordinary levers because you don't need to create a gap under the bead for the tool to sit. Saved my thumbs on many occassion.

To get the last bit on, I also had to strap down one side of the tyre with a velco strap (cable tie will also do) to prevent the bead coming loose when pulling over the other side.

You might also want to lubricate the bead with a little soapy water or silicone spray.

Make sure you use decent sealant and carry a good plug kit because there's no way you'll be getting these off and on at the roadside to fit a tube unless you've got a tyre jack to hand.

Other option is to sell the tyres and get something a bit easier to fit!

My method is to heat the tire with a hair dryer, outside first and then turn the tire inwards so you have heated both sides. The tyre should be warm but not hot. Mount one side to the rim and leave it for 20mins to stretch a bit. Remove tyre from rim and repeat the heating process. Then fully mount the tire. I have done this with numerous tyres that I couldn't get anywhere near mounting, even with levers (this method has never required a lever).
