Thornley's Pork butcher - erstwhile source of the best pork pies in the known universe.
Barbers across from the Bus station - guy with a flat nose, short back and sides, "A little something for the weekend, sir?"
Several years ago Waitrose tried to buy Booths and were firmly told what they could do with their money. This was before Waitrose started opening stores across the northwest.

Don't know about tripe as I've never looked for it.

Anne's cheese stall on the market has people queuing every day she's open.

Thornleys went under years ago. Browns the Butcher's still going strong though

You must mean the old bus station.

On the market these days there is a lot of interesting food, a couple of micro breweries and a homemade takeaway.
