[Ignoring the ketchup horror story] This is interesting. There's a wonderful dish from Lucknow that involves marinating a whole leg of lamb in green papaya - it contains the enzyme called papain, which tenderizes the meat. Same goes for pineapple - hence the origin of the much-abused gammon-and-pineapple thing. I wonder if kiwi has the same stuff in it?

Yep. Actinidin - a thiol protease related to papain which is indeed sold as a meat tenderizer. I used to work for an company that sold papain to brewers to prevent chill haze.

Well, TC, I did go to a grammar school and did vote for the snob option. It's a disgustingly sweet concoction that only serves to mask the inadequacies of the food.
I regard it in the same class of laziness as using cook-in sauces that come in a jar and pre-cooked rice for the hard of boiling.

:biggrin: When I worked in a supermarket, someone once asked me for "quick cook spaghetti"! Is there a slow braising kind???

I personally will have it (fnaar fnaar) on certain foodstuffs, but not others... for example, it goes splendidly with chips, but not with fish.

Oddly, salad cream goes well with chips and with fish fingers, but not with the fish part of fish 'n' chips. Branston, sparingly used, enhances cheese on toast, but I prefer to put Worcester sauce on this snack. Horseradish sauce is satan's spit.

I picked up some by accident once, it was grim, possibly because I cooked it for the normal length of time but following the instructions didn't give much better results.

Had square spaghetti recently, that was nice.
