Chicken & mushrooms in passata with potatoes.
Blackberry & apple crumble with vappy milk.
Crumble courtesy of Aunr Bessie as mine always turns out crap!!
Try this then... This is how I always make crumble, and will be putting the recipe in the apple guide / cook book that I'm currently writing for the parish magazine / community orchard.
You want a 2 pint ovenproof dish or pyrex. Wider and flatter is better. Fill it up to within about half an inch of the top with prepared fruit of choice - about 700g of fruit, there or thereabouts.
Weigh out 140g of sugar, add mixed spice, cinnamon or ginger to taste, and a couple of heaped tablespoons of cornflour. Mix that all together before stirring into the fruit. If your fruit is very sweet, you may want less sugar. The cornflour serves to thicken the juices as the fruit cooks, to give you a nice sauce.
Topping is 50 g of butter rubbed into 90g of plain flour, then 40g of granulated sugar stirred in. I prefer to use golden granulated as it gives a better flavour. Spread this on top of the fruit.
Bake in a preheated oven 180C fan / gas 6 for about 35 to mins till golden on top and the edges are bubbling. You may want to put the dish on some foil in case of it bubbling over - saves on the oven cleaning.
Serve with custard or vanilla ice cream or any other topping you might like.
