Two fillets of salmon a day before its use by date, some puff pastry slightly past, obvious answer, my very first attempt at salmon en croute, with a sauce of leeks, chestnut mushrooms and soft cheese. Used the excess pastry to make sausage rolls with a couple of halved Linda McCartney red onion and rosemary sausages; normally I would add some caramelised red onion, but couldn't be arsed. Slight cock-up on the catering front, dividing the pastry into equal portions, so it didn't quite meet on the salmon portions. Had to deconstruct the sos rolls to reduce their covering and use the resulting strip of pastry to join the sides on the salmon! Inelegant, but tasty, served with boiled new potatoes, tenderstem broccoli stems steamed over the spuds for fifteen minutes with the florets added for the last ten minutes.
Delicious enough to add to my repertoire.
