Yes but ditch the rucksack. I use a rack with top bag which has side pockets which unzip to form small panniers. My longest tour on this set up has been ten days in France. See my avatar.
The only time I've come unstuck on accommodation is in rural France and it can be quite stressful turning up somewhere and discovering accommodation hard to find. It's also expensive if there is only one choice.
Two years I rode into a large French town - struggling with the name - which boasted 400 rooms of varying types on its website. There was a festival on. No room at the inn.
I slept in a hedge wrapped in a survival blanket. It rained!!
