I have a 11 speed shimano cassette on my wahoo

The bike I use is in for a service

As I am using erg mode could I use a bike that has 12speed sram components on the trainer?

Presumably so long as it all lines up OK I don’t see why not.

As long as you're only using it in erg mode it'll be fine. Tweak the adjuster so that it lines up nicely with a sprocket of your choice and don't touch those shifters ^_^

(In reality, you'll probably have a ratio either side of your chosen one before the chain gets jumpy, which might be handy if you switch from seated to standing, or get bogged down briefly by a jump in resistance)

I've used a 10speed bike on an 11spd DD cassette before without much issue just switching digitally in the pc or in ERG. Its some times a pain finding a gear to start but once you do as long as you don't manually shift it works fine
