On my hybrid I had 700x40 I changed them to a 37 c
My question is what size can I go up to
my bike is a Giant Roam 2014

Which Roam do you have?

You can go up to 50mm with disc brakes, or 47mm with rim ones.

50mm comes really close, near chainstay so might be better sticking to 47mm.

The rim will take much wider tyres, but it will start touching after 50mm.

I have the Roam 2 with Disc brakes.
It did have 40 on it but as I did more road (commute) I drop it to 37.
I am going to use it more off road but still doing some road

Fitted a Swabble Huricane 700c-50 to a Roam 3, it did fit but really close but rides fine.

Would not go any bigger as it would touch. Might even better to stay at 700c-47, with something like the Swabble Smartsam.

@suj999 has answered the OP's question with regard to the width the Roam frame can manage. But putting tyres as wide as that on a 19c rim is pushing it and will do nothing for the handling (tyre shape increasingly resembles a lightbulb) and you'll get squirming when cornering at more than gentle speeds. The table at the bottom of Schwalbe's page (link in quote) suggest ludicrously wide tyres can go on a 19c, but remember, they are trying to sell tyres. The chart on the Schwalbe site seems to have added 54-62 onto the 19c line, comparing it with this 2007 ETRTO chart, showing the ranges of tire (sic) size that is recommended for each rim size. I tried to check this but the ETRTO standards don't seem available to download without subscription - I got this chart from here. It may be there's a later version than 2007 (under pressure from tyre manufacturers?).
