Generally speaking, compatibility is less of a problem than the manufacturers (who are tying to sell you a whole new groupset) would have you believe. I'm running a 15+ year old 9 speed (yes, that old) Dura Ace rear mech on a 10 speed Sram cassette with the last of the 10 speed Ultegra shifters. Works like a charm. (Sorry about the slight thread drift.)
It’s just a chainset, the 6800 and R8000 are both 11 speed, so it will be absolutely no different in terms of shifting, and front mech compatibility. The groupset compatibility issues can start with changing between some 10 and 11 speed Shimano kit.
There is a change to the new ultegra R8000 chainring spacing... It's now slightly wider spacing between the rings... That being said there should be no compatibility problems with older derailleurs but it is something to be aware of
