Wheels will be getting done, trying to find people who have the same bike and see what they have
How much do you want to spend? You can spend £100 up to several thousand! I like my 2014 Fulcrum 5's but the red spoke nipples on the Shimano/SRAM version would look gash against Celeste! There have been some supreme bargains out there on 2013 ones with Campag hub which is presumably what you need http://www.merlincycles.com/fulcrum-racing-5-wheels-2013-58459.html

I had a Bianchi dealer telling me and my friend that the Sora model already has decent wheels but to be honest I didn't believe a word he was saying about other things!

First link - the fact it says track bike wheel and rear only does not bode well for a bike you plan to ride on the road on two wheels!

??

I don't think tubular wheels are much good on roads from what I understand, not easy to fix punctures

Is it possible to get that style that isn't tubular?

Pair of Campy Zondas are right at the sweet spot of price vs performance. They are very good and well worth the money.

think I am going to go for new handlebars, I liked the 3T range and reading reviews they are reliable and strong.

Going to put new tyres on and maybe look at wheels and purchase for next year.

Never changing the colour

Initial thought are perhaps chainset as I am wanting a triple and a wider option when climbing hills (looking for advice or recommendations on this)

Wheels are named in upgrades on sites but what to look out for, how do I know what I have isn't as good as what I'm looking at

I'm def buying a saddle,tyres,

Budget wise £500 max

I would say wheels, and bet my bum dollar the stock ones aren't worth 500 knicker.

Get a pair of campanile neutron ultra so you can tell me if they're any good!
