My only trip to Santorini was in early 80's. I'd love to go back but know I'd be disappointed. Over recent years have had 3 trips to Skiathos, Skopelos and Alonnissos and loved it.
Want to go back to Crete (again went early 80's last) before I'm too old.

We stayed there fifteen years ago, pretty quiet apartment block with a pool.

I have a flat in Athens (Kesariani) .... I also have a farm in Lesvos (Mytilini)

forget about Lesvos (thousands of migrants are still arriving daily from Turkey, and it's so bad there that people have shut their shops and people are frightened to send their children to school ... lots of other islands close to Turkey are experiencing similar

Athens is good, as you can use it as a base and go on the daily trips to explore nearby Islands ... it's cheap on the ferries.

I once spent two days on the island of Kos and hated it; it was hot, dry, devoid of any interest and full of pissed up kids. I ended up hiring a moped just to get away from the resort and the tyre went flat.

A few of our best holidays ever were on Corfu. There are a few, and only a few, really quiet spots for a relaxing break. We stayed in the northern part in Arillas and nearby San Stefanos and St Georges are nice too. Not flashy at all but some great authentic greek restaurants and it's great if you can time it with one of the local wine festivals like we did. Great times and lovely people.

missed the water parks bit. Think there's one near Sisi on Crete but thats right next to Malia. which aint so family friendly.

Rhodes I imagine will be awash with water parks.

I can recommend Pula area (Istrian peninsula) in Croatia if wanting less busy and aren't set on Greece. Shorter flights too. We stayed in Porec, good resort and town and plenty of other places to visit too
