I use one of these, excellent, comes with a yellow cover hidden away that is bright and waterproof. But still get sweaty like with all backpacks. Holds a fair amount of stuff.

I have the blue one. Looks like it's been discontinued to perhaps be quick if you like it

You may need a handlebar bag too for socks  Why do you need to take a whole week's worth of stuff? I just take trousers and top daily

I have the old version of this:

Spectacularly waterproof, big enough for clothes, packed lunch, wash kit etc. I team it with a ResPro hi viz cover. Not cheap but the quality shows.

I've got a Deuter backpack that is about twelve years old and is something like this

the clever thing is that it has zipped pockets on your hibs, so you can put the heavy stuff like a lock where it's most comfortable to carry it. It's far superior to a rack and panniers - it doesn't sway around, and it's way more convenient.

I'm using it for the FNRttC to Paris this weekend in preference to a seatpost mounted Carradice job that I bought last year and turns the bike in to mush.

+1 for the Deuter bags. My Bike 1 is excellent, bigger capacity than that one though it lacks side pockets. I rather like my Carradice SQR Slim, just not the way it makes the bike handle when it's full!
