If you look at the Jewish tradition of Passover an egg is used as a symbol of morning (eggs are the first thing served to mourners after a Jewish funeral) over the fact that the temple in Jerusalem was raised to the ground in AD 70.
As the first Christians were in fact Jews and Jesus likened himself to the temple, the assumption is that when they celebrated the Passover each year the egg was use remember the death and then resurrection of Jesus.
The Orthodox and Eastern Catholic Churches were the first to decorate eggs, and then it is just a small step to chocolate eggs

One could argue 'what has a resurrection got to do with a pagan fertility festival as well' for which the egg was a symbol for

Anybody arguing here? I thought it was all about the chocolate
Anyway, maybe: resurrection=back from the dead=dead winter earth=spring regrowth of all sorts of edible stuff? Possibly, maybe?

Well, in the broadest sense, it's the creation of new life, and from an egg which appears to be a dead inanimate object. Resurrection = creation all over again.

For Greek Othodox Easter though, do we have to have Egg-plant instead? Mmmm, mousaka....

Is it just me who thinks creme eggs are getting smaller? I can eat a whole one in one go now.
(It could of course be that my gob is getting bigger)

Yes, and Wagon Wheels used to be the size of plates....

I knew someone who could get three Creme Eggs in his mouth. Alas he also thought nothing of then talking with his mouth full....
